Candied lemon slices

2 lemons (organic)
130g sugar
80g water


Cut lemons into thin slices.

Bring sugar and water to a simmer, stirring occasionally until sugar is dissolved. Add lemon slices and Add lemon slices, and simmer gently 15 to 20 minutes or until slightly translucent and the syrup is slightly thickened.

Put a slice of lemon and some syrup on each panna cotta and serve.
