Baghrir - Moroccan pancakes with Bianka

Ingredients: 

  • 250ml warm water
  • 125g Franck Instant Gris
  • 20g smooth flour
  • 2 teaspoons Bianka Classic
  • 2 teaspoons sugar
  • 3g dry yeast
  • 4g baking powder
  • a pinch of salt

Preparation:


Add grits, flour, baking powder, yeast, Bianka, salt and sugar to your bowl and mix it in thoroughly. Put everything into the blender, add lukewarm water and blend to a smooth paste with no lumps. Leave to rest for at least 30 minutes and blend briefly once more.

Heat a larger pan (28 cm or more in diameter), add some butter and melt it, then pour in the mixture, making three smaller pancakes (about 10-12 cm in diameter) and let the pancakes bake until the top side is dry. They are done when holes on the surfaces of the pancakes are fully formed and the surface is dry. These pancakes are baked on one side only. Bake the remaining pancakes and place them on a plate, place a bowl of honey in the centre and serve warm, topped with honey, with your favourite Bianka hot beverage.
