The specific aroma is obtained by roasting at a specific temperature for a specific time. Aroma is the olfactory perception of the gases released in the grinding of coffee and the steam released in the preparation of the coffee beverage. This is one of the main categories assessed by professional coffee tasters when selecting beans.
