Fritule with Franck Crema coffee

Ingredients:

  • 200 g flour,
  • half a bag of baking powder,
  • a pinch of salt,
  • 2 tablespoons sugar,
  • 1 egg,
  • 1 plain yogurt,
  • 2 tablespoons Franck Crema coffee,
  • vanilla bean,
  • drunken raisins,
  • powdered sugar

Preparation:

Pour 50 ml of lukewarm water over 1 tablespoon of Franck Crema coffee, leave for 5 minutes and then strain. In a bowl, mix the flour, baking powder and sugar, add the yogurt and egg and mix with a whisk until smooth. Add coffee, rum-soaked raisins and vanilla seeds. Let the dough rest for 30 minutes at room temperature. Heat at least 500 ml of vegetable or sunflower oil in a small but deep pan. When the oil is warm, dip a spoon and scrape the dough off with another spoon and into the hot oil. The size of my pot is 15 cm in diameter so I can fry five of these little doughnuts at once. They need to have enough space to turn on their own. Once fried, place them on a paper towel to soak up excess oil. Sprinkle with powdered sugar, which you can "spice up" with cinnamon or vanilla if desired.
