Semolina pudding with vegetable milk, pistachio paste, raspberries and orange

Ingredients:
- 80 g Franck wheat semolina
- 500 ml vegetable milk
- 100 ml water
- ½ teaspoon grated orange peel
- 20 ml orange juice
- 20 ml maple syrup
- 2 tablespoons pistachio paste
- 100 g raspberries
Instructions:
Mix water, milk and orange peel in a small pot and add semolina. Cook over low heat stirring constantly to avoid lumps. When you get the pudding to your desired thickness, add orange juice and maple syrup and remove from heat. Pour into serving bowls and add raspberries, maple syrup to taste and pistachio paste. You can make your homemade pistachio paste by grinding 100 g of toasted unsalted pistachios in a food processor into a fine powder. Add a teaspoon of oil and blend until you get a liquid paste.
